Beta-D-Galaktosidase
Beta-D-galaktozydaza is a liquid enzyme preparation originates from selected psychotropic bacterial strain. Blirt S.A. is producing recombinant enzyme in E.coli expression system.
The optimal activity of the enzyme is maintained in the temp.of 26-33 stopni C and pH 7-8. The enzyme is characterized by the high efficiency of lactose hydrolysis in temperature of 4 C, while the activity remains relatively constant in low temperatures and neutral pH.
The enzyme can be used in lactose hydrolysis from milk and sweet whey. Beta – galactosidase can be used for instance in production of lactose free milk.
